It’s a simple combination of simmering tomatoes, onions, garlic, spices and gently poached eggs. It’s nourishing, filling and one recipe I guarantee you’ll make time and again.

  1. Expect a time comitment of 1h
  2. Chop tomatoes
  3. Saute onions with olive oil
  4. dice red bell pepper
  5. mix tomatoes, onions, bell pepper and let simmer
  6. Add spices and garlic
  7. crack eggs on top
  8. once eggs are the right consistency turn off the heat
  9. sprinkle on some salt, parsley and cilatro
  10. Let the dish cool for 10 minutes before serving
  11. serve with thinly cut, toasted, whole wheat bread
